Zucchini and Squash Burritos
If you have a home garden with more zucchini than you know what to do with, try these Zucchini and Squash Burritos. This easy burrito recipe uses summer squash, zucchini, bell pepper, and tomato sauce for a creative twist on traditional burritos.

Ingredients
- 2 medium summer squash, chopped
- 2 medium zucchini, chopped
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 can (15-ounce) tomato sauce
- 2 tablespoons soy sauce
- 1 tablespoon parsley
- 1 bay leaf
- 2 cloves of garlic, chopped
- 1/2 teaspoon basil
Instructions
- Combine all ingredients in a large pot.
- Bring to a simmer over medium-high heat. Then reduce heat, cover, and simmer for 40 minutes or until tender.
- Remove bay leaf and, using a slotted spoon to drain, spread on tortillas.
- Top with sour cream and shredded cheddar cheese if desired.
